An established Zambian FMCG import, distribution and retail operation requires an experienced, hands-on Butchery Manager to assume full responsibility for its supermarket butchery department. The successful candidate will manage the department from procurement and production through to staffing, stock control, food safety, product development and profitability. This position requires a practical manager who can work independently, maintain consistently high standards and ensure the efficient production and presentation of quality meat products. The organisation has more than 30 years of trading experience and an extensive distribution network serving the retail, wholesale and hospitality sectors across Zambia
Minimum Requirements:
Willing and able to reside and work in Zambia
At least five years’ experience in butchery management, supermarket or retail butchery, meat production, meat processing or a similar environment
Diploma, certificate or recognised professional qualification in Butchery, Meat Processing, Food Production or a related field
Strong practical knowledge of meat cuts, deboning, portioning, processing and product preparation
Sound understanding of meat yields, costing, pricing, wastage control and departmental profitability
Experience managing stock levels, procurement, ordering and expiry dates
Knowledge of product development, recipes, marinades, spices and value-added meat products
Strong understanding of food-safety, hygiene, quality-control and cold-chain standards
Proven experience supervising, training and managing a butchery or production team
Able to plan and control daily production according to customer demand and stock requirements
Strong organisational, leadership and problem-solving skills
Hands-on management style with the ability to manage the department independently
Duties and Responsibilities:
Assume full operational responsibility for the supermarket butchery department
Manage, supervise and coordinate the butchery and meat-production team
Plan daily production to ensure sufficient product availability, consistent quality and minimal wastage
Procure and order meat, ingredients, spices, packaging and other departmental supplies
Monitor stock levels, product movement, yields, expiry dates and production costs
Maintain accurate stock, costing, production and wastage records
Control meat yields and portion sizes to support departmental profitability
Develop new meat products, flavours, recipes, marinades and value-added product ranges
Review and continuously improve existing products and production processes
Oversee cutting, deboning, portioning, processing, marinating, packaging, labelling and product presentation
Ensure recipes, portion sizes and production procedures are followed consistently
Maintain strict food-safety, hygiene, quality-control and cold-chain standards
Ensure the production area, equipment, storage facilities and cold rooms are clean and properly maintained
Train employees in meat preparation, equipment use, recipes, hygiene and production procedures
Monitor employee performance, productivity and adherence to departmental standards
Identify opportunities to improve efficiency, product quality, customer appeal and profitability
Ensure the department complies with relevant health, safety and food-handling requirements
